Dungeness CrabMeat Quiche

After a long day at work and it was a Friday, I made a Dungeness Crabmeat Quiche.  You might think big deal but I picked that crabmeat earlier at work.  If you have ever picked crabmeat it takes time. And for us Saturday is a working day.  We usually don’t join the “Friday Happy Hour” Scene at the local pub since we have to get up early.   Remember the early worm catches that delicious seafood!

This is a tried and true recipe.  You might add a little more Old Bay Seasoning or Tabasco if you are looking for an added kick.  It was delicious.  Good thing I doubled the recipe and made 2 quiches since people were coming back for seconds and thirds!

  1. Preheat oven 350 degrees. Mix eggs, mayonnaise, flour, and heavy whipping cream. Add crabmeat, cheese, and scallions. Season to taste. Pour mixture into pie shell. Place shell on baking sheet. Bake at 350 degrees for 40 minutes.

Crab Rolls

Crab Rolls have become the rage.  Out West we have simply referred to these sandwiches as Crab Meat sandwiches which has been on the menu forever.  The East Coast has always had the Lobster Rolls.  Now, with a little marketing strategy, the new name our on the West Coast has become Crab Rolls.  I surfed the web looking at different recipes for the Crab Rolls.  I actually settled on 4 different recipes.  None of them used the exact amount of Crab Meat that we carry in a container which is 6 ounce or 1 pound.  What’s a girl to do?  Make up my own as I go!  In my household everyone knows for one reason or the other I can’t just follow a recipe word for word.  Didn’t have my glasses on or didn’t have that specific ingredient.  It’s become the joke of my household.  It always tastes good.

The first night I made Crab Rolls for my husband and I.  The second night I added the Crab Meat Salad to a green salad.  The third day I had a Crab Meat Salad for lunch.  Yes, 1 pound of Crab Meat went a long way.  The juices of Crab Meat and lemon juice were amazing.  In fact, I would like to go out on a limb and say that marinade for a day enhanced the flavors even more.    Perfect for those hot summer days when you want something light and yummy!

Instructions
  1. Combine all the ingredients above to make the Crab Meat filling except the Hoagie Rolls, melted butter, and lettuce. Brush the melted butter on the Hoagie Rolls and toast until golden on inside of the bread. Place 1 lettuce leaf on each bun and then divide the Crab Meat filling. Any Crab Meat filling left over will be great the next day!
Recipe Notes

The lemon juice and zest make this filling very light.  Not even the mayonnaise was over bearing.

Tartar Sauce

Tartar Sauce is one of my favorite sauces I sometimes serve to enhance the flavor of  fish.  It’s hard to find a good Tartar Sauce in a jar so we like to make our own.  Some restaurants make their own to ensure freshness.  No additives or preservatives for our homemade Tartar Sauce.  We like to enhance our fresh seafood with a creamy sauce.  Easy and delicious tasting.  Try it next time you are preparing that Petrale Sole fillets or Pacific Rockfish Sandwich or Baked Calamari Tubes.

The other night my oldest asked me to bring home and make Petrale Sole for dinner.  I jumped for joy when I heard one of my children ask for fish for dinner.  You know there’s that old adage about if you work in an ice cream store you don’t eat ice cream.  Cobblers children don’t wear shoes.  A contractor’s house is still waiting to be finished.  Well rarely do any of my children ask for fish for dinner.

I figured it was the perfect time to make homemade Tartar Sauce.  First I was being lazy and used Dill Pickle Relish instead of chopping Dill Pickles. Second off, my lemon was extra large so I needed to add more mayo so the Tartar Sauce wasn’t so runny.  Both the fish and the Tartar Sauce turned out great.  What are you waiting for?  The fish is begging for this topping!

Crab and Muenster Cheesecake

Crab and Muenster Cheesecake makes a beautiful and tasty addition to a party.  It can be made 2 weeks ahead of time and frozen.   Once November 15th hits and the local Dungeness Crab season begins, our time is very limited.  There are days on end that we don’t make it home but rather sleep upstairs the warehouse.  Our local Dungeness Crab Season at the beginning means 24/7.  Its great to be able to pull something delicious out of our freezer especially during the holidays.  Cheesecake doesn’t always have to be sweet.  Cheesecakes don’t always have to be made with sugar.  We are always looking for recipes that will showcase our fresh seafood.   This Crab and Muenster Cheesecake shows off what the Dungeness Crabs can do other than lying on a plate cracked waiting for you!  Its a treat your guests won’t stop talking about for days to come.  After weeks of nonstop working the local Dungeness Crabs everyone will be amazed that we even had time to bake such a delicious cheesecake!  They will be asking for the Crab and Muenster Cheesecake recipe.  All you have to do is make it, plate it, serve it!  What are you waiting for?

Breadcrumb bottom
  1. Combine breadcrumbs and butter stir well. Firmly press into bottom of 9 in springform pan.
Filling
  1. Beat the cream cheese at a high speed until creamy. Add eggs one at a time before adding the next egg. Add the mayonnaise and flour. Blend well. Stir in the crabmeat, cheese, chives, and pimentos. Pour into the prepared pan.
Baking
  1. Bake at 325 degrees for 1 hour or until the center is set. Let cool to room temperature on a wire rack. Cover and chill for at least 8 hours.

Dungeness Crab Dip

Dungeness Crab Dip is a crowd pleasing appetizer.  Your guests will love it.  You can buy live Dungeness Crabs, cook them yourself and pick the meat out.  Your other choice is to buy cooked Dungeness Crabs, have them cleaned and cracked, and then all you would have to do is pick the meat out.  If you’re an expert at picking Dungeness Crabs or have plenty of time – then choose live or cooked Dungeness Crabs.  If you are short on time like I usually am when prepping for a party I will often choose the last alternative which is to use Dungeness Crabmeat in a perishable container.  The cooking, cleaning, and cracking of the Dungeness Crabs has been done for you and me.  How easy is that!  I make a list of all the dishes I’m planning on serving and then start finding ways to shorten the time to get them made. Usually, I plan on making more dishes than I have time for.   There so much to do with delicious Dungeness Crabs.  I just want to share my love for the Pacific Ocean Treasures as I refer to the Dungeness Crabs.  The Dungeness Crab Dip can be made ahead of time since this recipe is cold.

Albacore Tuna Sandwich – Good Old-fashion Favorite

Albacore Tuna Sandwich is a good old-fashion favorite of our family.   We only use the best quality Albacore Tuna to start our good old-fashioned sandwiches.   In the old days, we would only eat the Albacore Tuna our grandfather, Tom Lazio canned.  He used to can his Albacore Tuna in olive oil.  The Albacore would be small bullet sized at around 10 lbs each.   Now we hunt high and low throughout the country for the best canned Albacore Tuna in natural juices, or olive oil.  One of my sisters simply mixes the crumbled Albacore Tuna with mayonnaise for her sandwich.  I like to add a few more ingredients!  Scallions, Celery Seed, Dill Pickle Relish, Mustard are just a few of the ingredients I like to add to my good old-fashioned Albacore Tuna Sandwich!   We have some customers that will ask us to throw a fork into the bag so they can walk down the street to Aquatic Park at the end of SF Fisherman’s Wharf – pop open the top of the Albacore Tuna and start eating.  I like my Albacore Tuna Sandwich on 12/9/7 grain sliced bread.  Sourdough and Dutch Crunch rolls are more favorites to make an Albacore Tuna Sandwich on.  Looking for a quick delicious lunch – make an Albacore Tuna Sandwich.

Crab Meat Sandwich

 Crab Meat Sandwich is Mac’s favorite meal for lunch.  At work, she’ll run down the street to her favorite SF Fisherman’s Wharf restaurant and order the  Crab Meat Sandwich.  When she’s taking friends around Fisherman’s Wharf she’ll invite them to lunch. When asked for a suggestion Mac always tells them to order the Crab Meat Sandwich.  Its similar to the Lobster Roll on the East Coast.  She has just switched out the Lobster for the Dungeness Crab Meat.   Mac enjoys entertaining at home too.  If it’s lunch you know what she’s going to serve her girlfriends –  Crab Meat Sandwich.  The recipe is easy to follow. We only use Dungeness Crab Meat.   It also makes an ideal appetizer.  Spread it on small slices of French baguette instead of the rolls.  Just reading this makes my mouth water!

Last night I actually read 4 different Crab Meat Roll recipes and made a combination which tasted so good and light.  It wouldn’t work as an appetizer but rather as a salad if not in the hoagie roll. The cream cheese gives the Crab Meat Sandwich more of that creamy sandwich spread.   I’ll add the recipe soon.  Be on the lookout for it.

Shrimp Meat Salad

This Shrimp Meat Salad recipe is a favorite of our family.  Ideal for family night dinner or potluck for a crowd. Coldwater Shrimp from Oregon or Washington. The shrimp are already cooked and peeled.  I like that since that just cut down my work load.  Sometimes people refer to these Shrimp as Bay Shrimp.  I think this might be because a bay is smaller than the ocean?  This explanation sounds good to me.  They come frozen and you just need to thaw them out for your recipe.  Use 1 pound or 5 pounds of Shrimp Meat depending on how many you are serving.  Most of the time I just eyeball the ingredients that I add to the Shrimp Meat Salad.  Its so good left over!

Sunday nights I’ll add it to the menu for our 3 generation family dinner.  I send my Mom home with the left overs Shrimp Meat Salad for her lunch.  She grins from ear to ear!   The Shrimp Meat Salad turns out to be the best present I can give my Mom when her birthday comes round.  It’s great when the summertime heat reaches into the 90 degrees and no one feels like eating.  Sweet tasting meat that’s firm and lends well to the Apple Cider Vinegar dressing I whip up. Who can resist the little shrimps? Enjoy!

  1. Mix all the ingredients together. Add more or leave out ingredients according to your taste. Then add the Shrimp Meat and mix thoroughly. I make early in the morning and let the Shrimp Meat sit in the marinade for a few hours. Serve in a bowl or add lettuce leaves around it.

Some people do not like Mustard so I won't include it.  If I want more kick I will add more Apple Cider Vinegar.  I love Celery Seed so I tend to add more.
